Crispy, cheesy, golden brown, crinkly, salty, spicy, delicious. Chef Nyesha Arrington demonstrates how to make 10 styles of french fries in this step-by-step, 20-minute video from Eater’s Plateworthy video series. Some of the styles require more specialized equipment but there are a few that only require a sheet pan and a knife.
French fry dishes in the demonstration: Cottage fries, potato wedges, steak cut, Belgian-style, crinkle cut, waffle fries, pommes soufflées, shoestring, curly fries, and something called the potato tornado.
Arrington’s recipes also include lots of different spices, sauce, and Kewpie mayo. Via LA Weekly:
“Growing up in Lancaster, Arrington would run home to watch Julia Child, The Galloping Gourmet and Two Hot Tamales while other kids were playing sports. Part African-American and part Korean, Arrington learned from her mother and grandmother to make bulgogi, kimchi and japchae. ‘My mom makes phenomenal condiments,’ Arrington says. ‘She makes this sweet chili paste called gochujang from a recipe that her mom handed down to her.'”
