Chewy rice flour bunny cookies

Learn how to mix together a chewy rice flour bunny cookie that’s not too sweet. This table diary (식탁일기) video demonstrates.

The five-ingredient recipe calls for 140g glutinous rice flour, 1 egg (46g), 100g milk, 20g cooking oil, and 20g sugar. Via the captions, the amount of moisture contained in each glutinous rice powder can be different. If the dough is too watery when you lift the mixing spoon (it should form a V-shape as it hangs), add more glutinous rice flour.

Commenters have also suggested adding vanilla, almond, orange, lemon, or coconut extract to the mix for flavor.

When you press down any peaks of dough, be sure to use wet fingertips. Then bake the blank bunnies at 160°C (320°F) for 20 minutes.

To transform the bunnies into Dick Bruna’s Miffy character, you’ll need thinly piped black frosting or edible ink markers.
