How Does It Grow? Potatoes

Potatoes are stem tubers, nutrient underground storage organs for the nightshade Solanum tuberosum L. Domesticated around 7,000–10,000 years ago in Peru and Bolivia, potatoes are now the fourth most-farmed crop on Earth.

So how do they grow? Nicole Cotroneo Jolly visits King’s Family Farms to see how these tubers make it from the field to a bag of chips. Bonus: A roasted potato-smashing recipe that mixes the crispiness of a french fry with that yummy baked potato goodness.
