For a delicious homemade tomato sauce that comes together quickly, look no further than this classic Pomodoro sauce. Professional chef and food stylist Lish Steiling calls it the best tomato sauce in this Epicurious video.
A 28 ounce can of San Marzano tomatoes supplies the pomodoro for the Pomodoro sauce. You’ll also need a red onion, a carrot, a head of garlic, olive oil, salt, lots of fresh basil, and a wedge of parmesan, including the rind.
But these ingredients don’t need much prep. The large chunks of onion, carrot, parmesan rind, and basil all serve as aromatics—vegetables, herbs, and spices that infuse aroma and flavor into the sauce.
“The nice thing is, with this Pomodoro, is that you’re not really chopping anything; if you’re chopping it, you’re going to be making a marinara. But this is a Pomodoro, so it’s all about the tomato.”
And don’t forget to add a splash of the salty, starchy pasta water to help thicken the sauce when it’s done.
